This is the last week of ordering from the online farmers market for the Spring Season 2022. After this week we go on summer break from this sun! We’ll be back in the fall 2022. Exact date we’ll announce closer to opening.
The market opens Saturdays 8am to Wednesdays 5pm. Pick up your order on Thursdays in Frenchtown. This means you can do the shopping from you phone or home from local farms online beginning at 8am on Saturdays.

Dramatic changes in temperature (from 90 degrees Fahrenheit to below freezing in a single day), the ecosystem surrounding the volcano Tolima is rich with low elevations and volcanic soil, which holds onto moisture, drains destructive water and facilitates organic drainage, making it amazing for coffee bean plants. Even after 4,000 years since the last eruption, nutrients consisting of potassium, nitrogen, and boron–important for strong cellular walls and flower/fruit production–fill Tolima's volcanic soil, contributing to a hefty coffee tree yield.
Cupping notes: Citrus, caramel, and milk chocolate with bright acidity and a creamy body.

These are the notes from my green bean supplier:
This Bolivian coffee comes from a very unique part of Bolivia, the Teoponte region, next to Caranavi and further into the rainforest boarding on the Medidi Jungle. It comes from a group of about 42 farms. Our trader works with the Wildlife Conservation Society on planned agro forestry, as this rainforest is surrounded by protected land. The producers protect their land through planting within the construct of the forest, and maintaining thick, untouched parts of the forest as well. There are typically 50-100 bird species on these farms. Some are specific to the one ecosystem here and specific even to the farm. The soil is here is lush and rich and provides amazing nutrients that make this coffee a stand out.
Cupping Notes: Super chocolatey with a heavy body. Sweet and balanced with mild citrus-orange like acidity. Roast this slowly to a medium roast to get the best taste.

To use: bring 1 cup of water to just before a boil and pour the water into your favorite coffee cup.

Mexico Chiapas is a great pour-over coffee. It is known for being a well balanced cup and consistently one of the top selling beans.
From the provider: Chiapas Turquesa, or turquoise, takes its name from the precious stone—the color of which is spread across the regions, in its incredible waters and vast skies.This coffee comes from across the region, is grown at altitudes between 900 and 1,100 meters, and is characterized by large bean sizes and a round, balanced cup. For decades, Chiapas has been the center of political and ethnic conflicts. The Zapatista movement prevented any large coffee farms from coming into existence, due to their demands for indigenous rights and land access. Consequently, coffee has been cultivated mainly by smallholders, often descendants of Indigenous tribes. These producers plant, harvest and prepare the coffee by hand, sparing no effort to produce coffees they can feel proud of.
To help ensure that producers receive a fair price, we work closely with the exporters that support these communities with social projects. The exporters also use their own transportation infrastructure to bring the producers’ coffees to market.
The harvest season is December through March. All the coffee is received in parchment, quality controlled, and transported to a high tech dry mill in Veracruz. After a second quality check, the coffee is cleaned, milled and sorted to be prepared for export. This coffee has a quality-control standard that allows for only 15 imperfections per 300 grams.
Cupping notes: Milk chocolate, nutty, grape, citrus; medium body, cools sweet.

I've been a huge fan of 18 Rabbit coffees since I first tried them a little over a year ago. 18 Rabbit is a female owned co-op in Honduras. While I have tried the natural and the honey process this red honey process sounds intriguing to me. I look forward to trying to a cup myself!
Note: honey process is just a type of drying process for the beans. They do not use honey. It just means the beans are sticky this way. The process is between a natural and washed and makes the beans come out a little more fruity.
From my green bean provider: The Red Honey Process is fermented for 24 hours, and mostly at night in the cool weather. The cooler weather creates a slower ferment that you can taste in this coffee.
Cupping Notes: Aromas of strawberry, raspberry, and cherry that carry over into the cup. Balanced acidity and sweetness, well rounded, smooth, and juicy.
