When cooking it only needs a short boil or bake as it’s rich in nutrients and vitamins and you don’t want to cook those out. It pairs well with fish, naturally. It’s also great mixed with other herbs like sage for cooking with lamb or veggies.

Made with local gooseberries, this is a true Virgin Islands treat. This is one of the staple treats to buy around carnival and Christmas time food festivals. Eat it straight as we all do cuz it’s so good or get creative with it and use as a jam or jelly. There is one seed in the middle of each fruit to spit out. FYI the seed is not to chew or swallow.
